Many think that know, how wine from grapes turns out, imagining huge ten-litre glass a large bottle with the medical glove tense on its throat. The glove from grape berries formed at fermentation with addition of sugar of gases is strongly inflated and stretched. A typical picture of house winemaking…
On the big manufactures all at all so. Just collected grapes carry in special trailers with a sharp angular bottom directly on winery. Grapes it is impossible to carry far. Will be rumpled, will choke and even can deteriorate. In the trailer the maximum of 2,5 tons of grapes is located. It is impossible more – the bottom clusters will choke.
At factory in the special reception bunker dump some trailers at once, and any time wait, while will flow down «Samotek». «Samotek» is purely professional term. So name the grape juice which has flowed out from berries before pressing.
Such juice – gold fund of any winery. From «Samotek» receive the best wine on quality. After all in it there is no secret from the crushed stones, branches and shanks. This wine goes on manufacture of the best champagne or on manufacturing brandy first-rate quality spirits. An exit «samotek» - 8-10 %.
Then grapes subject to soft pressing, gently squeezing out of grape berries the juice named a mash. So we receive 30-35 % of juice going on manufacturing of the best dry, semi-dry and semi-sweet wines.
The most successfully turned out wine is put on storage and endurance in oak flanks and maintained in them from 18 till 36 months. Some kinds of wines are maintained longer – till 54 months. But here longer to hold wine in an oak it is not recommended. Those who considers are mistaken that, the longer the endurance – is better wine. It not always so.
After soft pressing passes rigid pressing – practically dry. There is only an oil cake named of experts mezga. It is a valuable product it is used for various spheres of agriculture (sterns to cattle, fertilizer etc.). From a mash received by rigid pressing make sweet and strong wines – Cahors wine, Port, the Sherry etc.

| News from wine-making enterprises "Burluk"

Since 2005 till 2009 around wine-making enterprise "Burluk" 292 hectares of new vineyards (660 000 grape bushes) have been landed.
Since spring 2009ã. rates of new landings have sharply increased. The spring of 2009 110 hectare of vineyards (244 000 grape bushes) have been landed and in autumn of 2009 84 hectares (190 000 grape bushes) have been landed too. To spring of 2010 65 hectares of the earth (145 000 grape bushes) are completely ready to new landings.
Thus, a total area of new landings by May 2010ã. should make 551 hectare of the earth (1 240 000 grape bushes).
Composition sort of vineyards makes more than 10 grades (Cabernet-sauvignon, Shardone, Pino-Fran, Pino-Blan, Pino-Nuar, etc.).
Also at the enterprise the technics composition intended for processing of vineyards is constantly modernized. From the new technics enterprise "Burluk" in 2009 has got new tractor DT-75.
Wine-making enterprise "Burluk" in a Soviet period was famous surprising on quality and a variety for wines, and also, unusual wine "Cahors wine", delivered in the Kremlin.

| News for wine-making enterprises "Starokrimskoe" |
In this year successfully works wine-making enterprises "Starokrimskoe", company "Alef-Vinal" (trade marks «Golden Amphora», "Klinkov", "Jan-Jak", "Ukrainka", "Helsinki"). From the beginning of 2009 on wine-making enterprise 134 hectares of new vineyards are landed - grades of grapes of Shardone and Muskat Ottonel have filled up and have decorated a remarkable collection of grape grades of the enterprise. Besides, 55 hectares of the earth are completely ready to new landings.
Also in 2009 as a part of technical park of enterprise "Starokrimskoe" there were 2 powerful specialised tractors New Holland, 2 grape cultivators Brown, the stamping car for formation of grape bushes during the summer period. These technics allows to make production process more productive, and raise up to European level of processing of vineyards.
Today under a drop irrigation in an economy of "Starokrimskiy" there are 353 hectares of vineyards, in this year their quantity will increase by 150 hectares.
During a season of harvesting of 2009 enterprise "Starokrimskoe" has accepted for processing 6200 tons of grapes.
Success of this enterprise are employees. At V Ukraine competition of wine-growers «Golden Amfora-2009» honourable II place has occupied the wine-grower of enterprise "Starokrimskoe" Cheban Nadezhda Vladimirovna.
